
BREAKFAST QUESADILLAS
2 Mission Protein Tortillas (I also love Jospeh Lavash Wraps)
3 Happy Eggs, whisked
1/2 green bell pepper, diced
3 pieces canadian bacon, chopped
1/4 cup mozzarella cheese (or any kind. Almond Cheese for Dairy Free)
Grass fed Butter or Avocado Oil or nonstick spray
drizzle a small amount of oil or non stick spray on a skillet. Add diced green bell pepper and allow to saute until tender. In a small bowl, whisk three eggs. Add eggs and chopped canadian bacon to the skillet. A few minutes before eggs are down, add cheese. Scoop egg mixture into a separate bowl. Add a little more oil or spray to the skillet. Add one tortilla to skillet and spread out egg mixture on top, then top with second tortilla. Cook on medium heat for a few minutes each side or until slightly browned. Cut into wedges.
